The wind sent leaves scurrying down the street, dancing up to grates, and the clouds raced across the sky as though they couldn’t wait to get where they were going.
It sounds like a brisk fall morning, except it was early summer muggy and definitely not fall brisk!
The lack of chill in the air (which is not usually a bad thing for me!) dampened my recent enthusiasm for various fall oatmeal with pumpkin and chocolate delights.
Fall pudding to the rescue! I still get the comforting tastes, but in a chilled, perfect for a muggy morning treat way.
Into the blender went:
1 1/2 cups unsweetened almond milk
2 tbsp flax seed
1/2 tbsp cocoa powder
2 tbsp vanilla hemp protein powder
1 tsp maple syrup
1/2 an apple, chopped up
1/2 cup frozen mango
2 tbsp sweet potato puree
1 tsp cinnamon
I mixed in a bit of Justin’s Chocolate Almond Butter and topped with cacoa nibs. Super yummy breakfast!
