What’s a good fall breakfast?

Not feeling like making a pudding this morning. What’s a gluten-free, dairy-free, mostly vegan girl to do?

Oatmeal with a flourish to the rescue! (Dad, sorry for the potential trauma to follow!)

For a perfectly decadent, but oh-so-healthy, breakfast, I made some oatmeal (vanilla hemp milk, oatmeal, cinnamon and nutmeg). Add in two heaping tbsp of canned pumpkin. Put a circle of baker’s chocolate on the bottom of your bowl (no sugar, just dark chocolate. Years ago, this would NEVER have happened. Having food issues made me explore possibilities I never would have considered before).

Add in your oatmeal, top with another baker’s chocolate circle, and drizzle on some macadamia nut butter….and swoon with happiness.
